Handcut Tagliatelle

In this pasta making class we will learn how to make a hand cut tagliatelle pasta with a mixed mushroom brandy cream sauce to finish it.

Tagliatelle is a long, flat, ribbon-shaped egg pasta made from semolina. Its name comes from the Italian verb, tagliare, meaning “to cut.” The reason is that tagliatelle is traditionally made by rolling the dough into flat sheets and then cutting it into ribbons using a kitchen knife. In stores, it is available either in straight ribbons or coiled into nests. We will make our dough together, cut the pasta dough and then create its finishing sauce. After a taste of our handiwork, everyone will go hoe with some freshly made tagliatelle ribbons.
