Kathy – White Bean Spicy Sausage Soup.
Our white bean spicy sausage demo was a riff on this classic recipe linked above. What we love is that you can use kale, collards, broccoli rabe or any hearty leafy green vegetable. For the sausage you can use andouille, chorizo or any spicy precooked sausage. If you go heavier on the broth, this is more of a soup but pack in the veggies and its more of a stew. To thicken, we recommend mashing a cup of white beans and letting them cook down.
