2-3teaspoonsof lemon or orange zest

Instructions
Preheat oven to 450 degrees. You will need a blender (immersion or stand) and an oven proof iron pan.
Put your eggs, milk, melted butter and vanilla in the blender, add the flour and salt and zip it together into a smooth batter. We recommend browning your butter to give a deeper, nuttier flavor.
In your cast iron or steel French pan, melt two teaspoons of butter on medium heat and add your fruit.
Let cook for 2-3 minutes spreading the fruit out across the bottom of the pan.
Add your batter to the hot pan and let cook for another minute or so then transfer to the 450 degree oven for 15-20 minutes, til nicely browned and puffed up.
Remove from oven. Sprinkle with powdered sugar or drizzle with maple syrup and serve warm or room temp. Pancake will deflate as it cools. Still tastes great!
