Gilda's Quick Lemon Curd

- 1 cup white sugar
- zest of 1 large lemon
- 3 eggs
- 1 egg yolk
- 6 Tablespoons fresh squeezed lemon juice
- 1/2 cup unsalted butter melted
Using a food processor, combine sugar and lemon zest using 4 on/off turns. Then mix until peel is finely minced and well distributed.
Add egg yolks and lemon juice then blend for 5 seconds.
With machine running, pour the melted butter slowly into the bowl and blend.
Transfer to a glass, microwave safe bowl.
Cook full power for a total of 3 1/2 minutes. In the beginning sop every minute and stir with a fork. After 2 minutes, stop every 30 seconds and stir.
Cool to room temperature and then refrigerate thoroughly before using.
If making a double batch, microwave for about 6 minutes, stirring frequently, especially towards the end.
Filling can be refrigerated for 2-3 months.
