Masala Chai

A warm and comforting winter tea

Ingredients
  

  • 2 cups of milk
  • 1 cup of water
  • 1 1-2 inch cinnamon stick
  • 4 cloves
  • 2 whole anise seed
  • 3 Tbsp. loose-leaf strong black tea like Assam (or 4 teabags)
  • 5-6 green cardamom pods
  • 1/8 tsp. chai spice powder
  • ¼ in. knob of ginger thinly sliced
  • 3-4 Tbsp. sugar
  • 3-4 shredded mint leaves add more for a stronger taste

Instructions
 

  • In a medium saucepan or pot, add water and milk and allow to simmer for 3-4 minutes on medium-low heat.
  • Add cinnamon sticks, cloves, anise, loose tea, cardamom, chai spice powder, and brown sugar. Mix slowly and allow to simmer on low for another 5-7 minutes or until you see the milk become a brownish color.
  • Add fresh mint and ginger.
  • Reduce heat to low and allow to simmer for another 3-4 minutes – mixing in between to avoid the tea from boiling over.
  • Remove from heat and pour into mug using a strainer to catch all whole spices.
  • Serve hot.
