Masala Chai
A warm and comforting winter tea

- 2 cups of milk
- 1 cup of water
- 1 1-2 inch cinnamon stick
- 4 cloves
- 2 whole anise seed
- 3 Tbsp. loose-leaf strong black tea like Assam (or 4 teabags)
- 5-6 green cardamom pods
- 1/8 tsp. chai spice powder
- ¼ in. knob of ginger thinly sliced
- 3-4 Tbsp. sugar
- 3-4 shredded mint leaves add more for a stronger taste
In a medium saucepan or pot, add water and milk and allow to simmer for 3-4 minutes on medium-low heat.
Add cinnamon sticks, cloves, anise, loose tea, cardamom, chai spice powder, and brown sugar. Mix slowly and allow to simmer on low for another 5-7 minutes or until you see the milk become a brownish color.
Add fresh mint and ginger.
Reduce heat to low and allow to simmer for another 3-4 minutes – mixing in between to avoid the tea from boiling over.
Remove from heat and pour into mug using a strainer to catch all whole spices.
Serve hot.
