Millet Pilaf with Vegetables

A light and nutritious side dish

Ingredients
  

  • 1 cup millet
  • 2 ½ cups vegetable stock
  • 1 carrot small dice
  • 1 celery stalk small dice
  • 1 small onion finely chopped
  • 2 tbsp olive oil
  • Salt & black pepper to taste

Instructions
 

  • Sauté onion, celery, and carrot in olive oil until translucent.
  • Toast millet 1–2 min, add stock, bring to boil, cover, and simmer 18–20 min until liquid is absorbed.
  • Fluff with fork, season, and finish with olive oil or cracked pepper.

Notes

Optional Additions:
  • Toasted almonds or pistachios
  • Chopped parsley or dill
  • Sautéed mushrooms, chickpeas, or roasted sweet potatoes for a heartier version
