Millet Pilaf with Vegetables
A light and nutritious side dish

- 1 cup millet
- 2 ½ cups vegetable stock
- 1 carrot small dice
- 1 celery stalk small dice
- 1 small onion finely chopped
- 2 tbsp olive oil
- Salt & black pepper to taste
Sauté onion, celery, and carrot in olive oil until translucent.
Toast millet 1–2 min, add stock, bring to boil, cover, and simmer 18–20 min until liquid is absorbed.
Fluff with fork, season, and finish with olive oil or cracked pepper.
Optional Additions:
- Toasted almonds or pistachios
- Chopped parsley or dill
- Sautéed mushrooms, chickpeas, or roasted sweet potatoes for a heartier version
