Place the ricotta in a mixing bowl and give a quick mix by hand
In a stand mixer with a whisk attachment, put one cup of heavy cream and beat until soft peaks start to form. (You can do this by hand, but it takes longer.)
While mixing to soft peaks, add the vanilla.
Then add the confectioners sugar and continue to mix until stiff peaks form.
Fold he whipped cream into the ricotta cheese by hand.
Your mousse is ready. You can chill until ready to serve or serve immediately.
Notes
You can layer your mousse in mason jars or pretty glasses with a myriad of complementary treats. Use your favorite jams, fresh berries, compote, chocolate chips, caramel sauce, honey, cookies crumbs? Whatever you fancy.
