Sweet Quinoa Porridge with Fresh Fruit

Ingredients
  

  • 1 cup quinoa rinsed
  • 2 ½ cups coconut or almond milk
  • 1 vanilla bean split or 1 tsp vanilla extract
  • 2 tbsp sweetener maple syrup, agave, or coconut sugar
  • ½ tsp cinnamon
  • Pinch of sea salt

Toppings:

  • Fresh berries sliced banana, mango, or apple
  • Toasted nuts or seeds optional
  • Drizzle of maple syrup or nut butter optional

Instructions
 

  • Heat milk, vanilla, cinnamon, and salt in a saucepan until steaming (do not boil).
  • Add quinoa, reduce heat to low, and cook 15–20 min, stirring occasionally, until thickened.
  • Sweeten to taste and serve with toppings.
