Sweet Quinoa Porridge with Fresh Fruit

- 1 cup quinoa rinsed
- 2 ½ cups coconut or almond milk
- 1 vanilla bean split or 1 tsp vanilla extract
- 2 tbsp sweetener maple syrup, agave, or coconut sugar
- ½ tsp cinnamon
- Pinch of sea salt
Toppings:
- Fresh berries sliced banana, mango, or apple
- Toasted nuts or seeds optional
- Drizzle of maple syrup or nut butter optional
Heat milk, vanilla, cinnamon, and salt in a saucepan until steaming (do not boil).
Add quinoa, reduce heat to low, and cook 15–20 min, stirring occasionally, until thickened.
Sweeten to taste and serve with toppings.
