Red onion, sliced

Water

Vinegar or citrus juice

Salt, more to taste

Sugar, more to taste

Red pepper flakes
Instructions
Pack onion into nonreactive container (glass, stainless steel, plastic). Add remaining ingredients and stir well. Taste and adjust to your liking.
Let sit at least 30 minutes before eating.
Notes
Pickled red onions are a wonderful addition to salads, sandwiches and charcuterie boards.
