Combine half of the chickpeas, cider vinegar, kimchi, all spices, and egg. Mix until chunky.
Smash the remaining chickpeas until fairly smooth. Add to mixture.
Add flour and bread crumbs. Combine until fully incorporated.
Divide into 5.5oz patties.
Notes
Once you are comfortable with the process, change the recipe up: use different beans, alternative spices! Make a black bean version with cumin and chili powder!
