Preheat oven to 450. Wisk together the warm milk, sugar and salt in a large mixing bowl.
Sprinkle the yeast on top and wait about 5 to 10 minutes for the yeast to activate.
Add the flour and melted butter. Mix everything into combined add a little more flour if the dough is too sticky, it should form a ball and not be too sticky.
Transfer to a lightly oiled bowl cover with a warm towel and let it sit for 20 to 30 minutes.
Cover a baking pan with parchment paper.
Mix 1 egg with water for egg wash mixture and set aside until after boiled.
Preheat the pot of water and add the baking soda.
Roll out our pretzels and cut them to about 1” bites
Place the dough into the boiling water for about 30 seconds.
Remove the dough bites and cover them with egg wash mixture.
Add salt on top. Bake until golden brown about 10-14 minutes.
