2cans chickpeasgarbanzo beans, reserve the aquafaba (liquid)
4clovesraw garlic
2Tbsptahini
2Tbsplemon juice
extra virgin olive oil
Kosher salt
Instructions
In food processor pulse garlic until finely minced.
Add chickpeas, 1 can’s worth aquafaba, tahini, and half the lemon juice. Blend until fully incorporated.
With the blade running, slowly stream olive oil until desired texture is achieved. Salt to taste. Add more lemon juice if desired.

Chickpeas (also known as Garbanzo beans) can be substituted for just about any white bean, from butter beans to great northern to cannellini beans.Aquafaba is the name for the juice in the bean can. It is often used as a vegan substitute for egg whites.
