Chickpea Hummus

A classic Mediterranean dip or condiment!

Ingredients
  

  • 2 cans chickpeas garbanzo beans, reserve the aquafaba (liquid)
  • 4 cloves raw garlic
  • 2 Tbsp tahini
  • 2 Tbsp lemon juice
  • extra virgin olive oil
  • Kosher salt

Instructions
 

  • In food processor pulse garlic until finely minced.
  • Add chickpeas, 1 can’s worth aquafaba, tahini, and half the lemon juice. Blend until fully incorporated.
  • With the blade running, slowly stream olive oil until desired texture is achieved. Salt to taste. Add more lemon juice if desired.

Notes

Chickpeas (also known as Garbanzo beans) can be substituted for just about any white bean, from butter beans to great northern to cannellini beans.
Aquafaba is the name for the juice in the bean can. It is often used as a vegan substitute for egg whites.
