Cut apples into 3/4- to 1-inch-long matchsticks and place in a large mixing bowl. Pour lemon juice over the apple pieces and toss well to coat. Set aside for five minutes.
Cut your carrots into matchsticks and dice your onion. Add to apples in large mixing bowl with the dried cranberries.
In a separate small bowl, mix the yogurt and honey together well, adding salt and pepper to taste.
Mix your yogurt dressing with the apples mixture and toss well.
Add the clementine slices to the bowl and stir into the salad.
Chill 30 minutes and serve.
Notes
Garnish this salad with slivered almonds, orange zest or chives. If you like a softer texture, you can ribbon your carrots with a vegetable peeler, then cut into 1 inch or less pieces.
