Carrot Apple Salad

A refreshing fall classic!

Ingredients
  

  • 2 apples
  • 2 tablespoons lemon juice fresh squeezed
  • 2 cups carrots cut into matchsticks
  • 1/4 cup yellow onion finely diced
  • 1/3 cup dried cranberries
  • 1/2 cup yogurt
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup clementine segments cut in half

Instructions
 

  • Cut apples into 3/4- to 1-inch-long matchsticks and place in a large mixing bowl. Pour lemon juice over the apple pieces and toss well to coat. Set aside for five minutes.
  • Cut your carrots into matchsticks and dice your onion. Add to apples in large mixing bowl with the dried cranberries.
  • In a separate small bowl, mix the yogurt and honey together well, adding salt and pepper to taste.
  • Mix your yogurt dressing with the apples mixture and toss well.
  • Add the clementine slices to the bowl and stir into the salad.
  • Chill 30 minutes and serve.

Notes

Garnish this salad with slivered almonds, orange zest or chives. If you like a softer texture, you can ribbon your carrots with a vegetable peeler, then cut into 1 inch or less pieces.
