Carrot Apple Salad

Ingredients
- 2 apples
- 2 tablespoons lemon juice fresh squeezed
- 2 cups carrots cut into matchsticks
- 1/4 cup yellow onion finely diced
- 1/3 cup dried cranberries
- 1/2 cup yogurt
- 1 tablespoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup clementine segments cut in half
Instructions
- Cut apples into 3/4- to 1-inch-long matchsticks and place in a large mixing bowl. Pour lemon juice over the apple pieces and toss well to coat. Set aside for five minutes.
- Cut your carrots into matchsticks and dice your onion. Add to apples in large mixing bowl with the dried cranberries.
- In a separate small bowl, mix the yogurt and honey together well, adding salt and pepper to taste.
- Mix your yogurt dressing with the apples mixture and toss well.
- Add the clementine slices to the bowl and stir into the salad.
- Chill 30 minutes and serve.
Notes
Garnish this salad with slivered almonds, orange zest or chives. If you like a softer texture, you can ribbon your carrots with a vegetable peeler, then cut into 1 inch or less pieces.
