Ingredients

russet potatoes
scrubbed (peeling is optional)

onion
grated
4
scallions
finely chopped
4
eggs
1
cup
sharp cheddar cheese
grated
Salt and pepper
to taste
Instructions
Grate potatoes and add to a bowl of water (to prevent oxidation).
Grate onion. Drain the potatoes and add the onion. Squeeze tightly in cheesecloth or a lint free towel to remove as much excess liquid as possible.
Grate cheddar and add to large mixing bowl with potatoes, onion and eggs.
Finely chop the scallion greens and whites and add to bowl with 1 teaspoon salt and 1 teaspoon pepper.
Mix together well and cook on waffle iron. You want a very well browned waffle that is cooked through.
