Hash Brown Waffles

Ingredients
- 4 russet potatoes scrubbed (peeling is optional)
- 1 onion grated
- 4 scallions finely chopped
- 4 eggs
- 1 cup sharp cheddar cheese grated
- Salt and pepper to taste
Instructions
- Grate potatoes and add to a bowl of water (to prevent oxidation).
- Grate onion. Drain the potatoes and add the onion. Squeeze tightly in cheesecloth or a lint free towel to remove as much excess liquid as possible.
- Grate cheddar and add to large mixing bowl with potatoes, onion and eggs.
- Finely chop the scallion greens and whites and add to bowl with 1 teaspoon salt and 1 teaspoon pepper.
- Mix together well and cook on waffle iron. You want a very well browned waffle that is cooked through.
