Hash Brown Waffles

A crispy, savory breakfast treat

Ingredients
  

  • 4 russet potatoes scrubbed (peeling is optional)
  • 1 onion grated
  • 4 scallions finely chopped
  • 4 eggs
  • 1 cup sharp cheddar cheese grated
  • Salt and pepper to taste

Instructions
 

  • Grate potatoes and add to a bowl of water (to prevent oxidation).
  • Grate onion. Drain the potatoes and add the onion. Squeeze tightly in cheesecloth or a lint free towel to remove as much excess liquid as possible.
  • Grate cheddar and add to large mixing bowl with potatoes, onion and eggs.
  • Finely chop the scallion greens and whites and add to bowl with 1 teaspoon salt and 1 teaspoon pepper.
  • Mix together well and cook on waffle iron. You want a very well browned waffle that is cooked through.
