Instructions
Preheat oven to 400°F (200°C). Toss sweet potatoes and carrots with olive oil, salt, and pepper.
Roast for 25–30 minutes, fl ipping halfway through, until tender and lightly caramelized.
In a small bowl, whisk tahini, maple syrup, lemon juice, and ginger together.
Drizzle the sauce over roasted sweet potatoes and carrots before serving.

You can also pan-roast this recipe and save the oven heat in summer!
