Pan-Roasted Sweet Potatoes & Carrots with Tahini Maple Sauce

Ingredients
  

  • 2 medium sweet potatoes cubed
  • 3-4 carrots sliced
  • 1 tbsp olive oil
  • 2 tbsp tahini
  • 1 tbsp maple syrup
  • 1 tsp fresh ginger grated
  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 400°F (200°C). Toss sweet potatoes and carrots with olive oil, salt, and pepper.
  • Roast for 25–30 minutes, fl ipping halfway through, until tender and lightly caramelized.
  • In a small bowl, whisk tahini, maple syrup, lemon juice, and ginger together.
  • Drizzle the sauce over roasted sweet potatoes and carrots before serving.

Notes

You can also pan-roast this recipe and save the oven heat in summer!
