Ingredients
- 2 medium sweet potatoes cubed
- 3-4 carrots sliced
- 1 tbsp olive oil
- 2 tbsp tahini
- 1 tbsp maple syrup
- 1 tsp fresh ginger grated
- 1 tsp lemon juice
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Toss sweet potatoes and carrots with olive oil, salt, and pepper.
- Roast for 25–30 minutes, fl ipping halfway through, until tender and lightly caramelized.
- In a small bowl, whisk tahini, maple syrup, lemon juice, and ginger together.
- Drizzle the sauce over roasted sweet potatoes and carrots before serving.

You can also pan-roast this recipe and save the oven heat in summer!
