extra virgin olive or avocado oil

Maple–Peanut Sauce

natural peanut butter

tablespoon
rice vinegar or apple cider vinegar

tablespoon
maple syrup
1
tablespoon
fresh squeezed lime juice

teaspoon
fresh grated ginger
1
teaspoon
inced garlic

teaspoon
mushroom powder

chopped green onions

tablespoon
chopped cilantro
Fresh chilies
finely sliced (to taste)
Salt & black pepper
Instructions
Cook soba noodles according to package directions. Rinse lightly and set aside.
Pan-roast shiitakes in oil until golden and slightly crisp. Season lightly. Remove.
In the same pan, sauté green beans, red peppers, and bok choy separately to maintain texture.
Whisk all sauce ingredients until smooth and balanced. Adjust salt and acidity.
Toss noodles, vegetables, and sauce together over medium heat.
Finish with fresh herbs and additional chilies.
