Ingredients
Stir-Fry
- 8 oz soba noodles
- 1 cup shiitake mushrooms sliced
- 2 heads bok choy chopped
- 1 cup green beans trimmed
- 1 red bell pepper sliced
- 1 tablespoon extra virgin olive or avocado oil
- Salt to taste
Maple–Peanut Sauce
- 3 tablespoon natural peanut butter
- 1.5 tablespoon rice vinegar or apple cider vinegar
- 1 tablespoon maple syrup
- 1 tablespoon fresh squeezed lime juice
- 1 teaspoon fresh grated ginger
- 1 teaspoon inced garlic
- 1 teaspoon mushroom powder
- 1 tablespoon chopped green onions
- 1 tablespoon chopped cilantro
- Fresh chilies finely sliced (to taste)
- Salt & black pepper
Instructions
- Cook soba noodles according to package directions. Rinse lightly and set aside.
- Pan-roast shiitakes in oil until golden and slightly crisp. Season lightly. Remove.
- In the same pan, sauté green beans, red peppers, and bok choy separately to maintain texture.
- Whisk all sauce ingredients until smooth and balanced. Adjust salt and acidity.
- Toss noodles, vegetables, and sauce together over medium heat.
- Finish with fresh herbs and additional chilies.
