Blueberry Flatbread

Ingredients
Ingredients for flatbread
- 2 flatbread crusts recipe below
- 2 tablespoons olive oil
- zest of 1 lemon about a tablespoon
- 8 oz. plain goat cheese
- 1 cup fresh blueberries
- 4-6 tablespoons honey
- mint leaves finely chopped
- salt
Ingredients for flatbread crust
- 3 cups all purpose flour
- 1 teaspoon salt
- 1 cup warm water
- 3 Tablespoons olive oil
- Cornmeal for dusting
Instructions
- Instructions for flatbread crust
- Preheat oven to 475.
- Add flour and salt to food processor and pulse till well mixed.
- Add oil and water.
- Pulse until dough ball forms together.
- Transfer dough to a lightly floured surface and knead for about 1 minute or until the dough is smooth.
- Divide into 2 balls.
- Roll out and form into desired shapes, about 1/4” thick.
- Dust baking tray with cornmeal and place crust on tray.
- Poke the surface with fork all over.
- Bake 5-8 minutes until the edges are turning light brown.
- Brush surface of pre-baked flatbreads with oil and salt lightly, then add toppings (lemon zest, goat cheese and blueberries - and bake another 5-8 minutes until cheese is browning on the edges.
- Top with drizzled honey and chopped mint. Lightly salt, and serve!
