Brine

  • 2 cups water
  • 1 cup vinegar white or apple cider
  • 1/3 cup sugar
  • 3 1/2 Tablespoons salt

Pickle

  • 2 large cauliflower heads cut into florets
  • 1 3/4 teaspoon kosher or sea salt
  • 6 cardamon pods
  • 3 bay leaves
  • 1 1/2 teaspoon sweet curry powder
  • 3/4 teaspoon red pepper flakes
  • 3/4 teaspoon turmeric
