Peach, Prosciutto and Brie Quesadilla

A sweet and salty summer treat!

Ingredients
  

  • 2 teaspoons olive or vegetable oil
  • 2-3 ripe peaches sliced
  • 2-4 large leaves of basil plus garnish
  • 2 flour tortillas
  • 6 slices Brie cheese
  • 4 slices prosciutto 2 per quesadilla
  • 2 Tbsp butter divided
  • 2-3 Tbsp brown sugar
  • 1 tablespoon hot or regular honey. We like hot honey for a little sweet n spicy counterpoint.

Instructions
 

  • Cook down the sliced peaches in a tablespoon of butter, brown sugar, and fresh basil leaves. Simmer about 5 minutes or until peaches are soft. Remove the basil leaves.
  • Layout your tortilla and arrange 3 of the brie slices to cover half the tortilla, leaving about ½ inch from the edges. Layer with 3 peach slices and 2 slices of prosciutto. Fold tortilla in half. Repeat with other tortilla until you have 2 folded quesadillas ready to cook.
  • Heat your skillet over medium heat and brush very lightly with olive oil, just to barely coat the bottom of the pan. Add in each folded quesadilla and cook until tortilla is browned and cheese is melting (about 3 minutes). Flip over and brown the second side. When both sides are brown and the brie is melted, plate. Serve with a drizzle of hot honey and small leaves of fresh basil.
