Summer Fruit Sorbet

Ingredients
  

  • 3 cups fruit chopped and frozen
  • 2 Tablespoons honey or simple syrup
  • 1 teaspoon lemon juice
  • 1/2 cup water optional

Instructions
 

  • Rinse fruit with cool running water and chop or dice into small chunks. Place fruit in a single layer on a sheet pan and freeze for at least 2 hours or overnight.
  • Add honey and lemon juice to a good blender then add your fresh fruit a bit at a time while processing. Process until smooth. Add up to 1/2 cup of water or complementary fruit juice as necessary to thin out. Mixture should be a tight slurry that is spoonable.
  • Tips: Make sure all your ingredients and your blender are cold. Chill your serving ware.
  • To boost flavor, substitute fruit juice or icy fruit puree for the water. If you want to add an herbal element (think peach and basil, or strawberry and thyme) then make an herb infused simple syrup that you can substitute for the honey.
