Humble Spud, located in Mt. laurel, New Jersey is a new upscale food vendor focusing on providing breakfast and lunch items; with the highlight on potatoes. Their product line fits nicely with dietary trends as well as comfort foods, as individuals are seeking happier lifestyles complimented by delicious gluten-free, vegetarian, and vegan foods. Humble Spud is led by Chef Desmond Keefe who has been in the food business for over 30 years. Chef Desmond is the director of Culinary and Hospitality at the local culinary institute for years and has worked as a chef at some of the most upscale restaurants in the Northeastern US. As such, Chef Desmond has an in-depth knowledge of the food business including the operations side (running day-to-day operations) and the business management side (staffing, marketing, etc.).
Humble Spud offers a menu of loaded potatoes, twice-baked potatoes, breakfast burritos, potato focaccia, roasted root vegetables, Shepherd’s pie, Humble mac (potato mac & cheese) vegan Irish stew and sandwiches. All products use local ingredients as much as possible. Several products on the menu will be highlighted as being lower in gluten, or vegetarian. Loaded potatoes have new specials every week that include the Big Easy (Sausage, chicken, and shrimp gumbo), the Big D (Chili, cheese, sour cream, scallions and jalapeno), The Big Luv (Broccoli & cheese), and the Big Brisket (BBQ’d Smoked Brisket).
