In a country with a food culture as strong as Italy’s there are many food traditions, like certain pasta shapes are made with specific sauces. Cavatelli pasta, small shells that look like tiny hot dog buns, are most commonly served with garlic and broccoli or broccoli rabe.
We’ll get hands on mixing the pasta dough, forming and then rolling our cavatelli on special boards to get their traditional texture. Then we will make sauteed broccoli rabe and sausage in a shallot garlic white wine sauce to top our homemade cavatelli. The class will taste our dish together and everyone will take some fresh cavatelli home.
