Let's make classic Mexican tacos, where it's all about the knifework. Chef Tamara will start with a discussion of knives and how to choose the best knife for the task, then a lesson on getting (and keeping) those blades lightening sharp. Then we will slice, chop and carve our toppings and make corn tortillas from scratch.

A knife is the most valuable tool in your kitchen. It’s your workhorse, and the more comfortable you are using it the more work you will get out of it. So, let’s make classic Mexican tacos, where it’s all about the knifework. Chef Tamara will start with a discussion of knives and how to choose the best knife for the task, then a lesson on getting (and keeping) those blades lightening sharp. Then we will slice, chop and carve our toppings and make corn tortillas from scratch. We’ll assemble and eat as a class.
Please bring your favorite knife from home. Knives are provided in the farmhouse kitchen but it’s best to work with a familiar tool.
