The galette is the heartier, rustic version if pie. Free form and baked right on the baking sheet, these pastries can be sweet or savory. We’ll start by making the dough. While the dough chills, we’ll show you how to make fresh milk into silky ricotta, then build the filling for your galettes to bake and enjoy in class.
