Davia's Fluffy Tiramisu

A rich, fluffy take on an Italian classic.

Ingredients
  

  • ¼ cup Dutch cocoa + extra for dusting
  • 1 cup espresso optional: splash of rum or Marsala
  • 1 tbsp vanilla extract
  • 5 cold egg yolks pasteurized
  • ½ cup sugar
  • ¼ tsp kosher salt
  • 16 oz mascarpone chilled
  • cups heavy cream cold
  • 18 ladyfinger cookies HARD

Instructions
 

  • Mix cocoa, espresso & vanilla. Set aside.
  • Beat yolks & sugar until pale, about 5 min. Add salt & mascarpone, mix until smooth.
  • Add cream, whip to soft peaks.
  • Quickly dip ladyfingers in espresso mix (1–2 sec).
  • Layer in 7x11 dish.
  • Spread half the mascarpone cream. Repeat layers.
  • Cover & chill overnight.
  • Dust with cocoa powder in the morning and again before serving.
