Davia's Spelt Tart Crust
A wonderfully nutty crust for pastry

Ingredients
- 125 g Unsalted Butter cold
- 200 g Spelt or All-Purpose Flour
- 4 Tbsp Sugar
- 1 Egg
- ½ tsp Baking Powder
- ½ tsp Salt
Instructions
- Mix Dry Ingredients: In a large bowl or stand mixer, combine flour, sugar, baking powder, and salt.
- Add Butter: Cut in cold butter until mixture is crumbly.
- Add Egg: Mix in the egg until a dough forms. Do not overwork.
- Chill Dough: Wrap and refrigerate for at least 30 minutes.
- Roll & Bake: Roll out on floured surface and press into tart pan. Blind bake at 350°F (175°C) for 10–12 min with pie weights if pre-baking.
