Ingredients
- 1 cup millet
- 2 ½ cups vegetable stock
- 1 carrot small dice
- 1 celery stalk small dice
- 1 small onion finely chopped
- 2 tbsp olive oil
- Salt & black pepper to taste
Instructions
- Sauté onion, celery, and carrot in olive oil until translucent.
- Toast millet 1–2 min, add stock, bring to boil, cover, and simmer 18–20 min until liquid is absorbed.
- Fluff with fork, season, and finish with olive oil or cracked pepper.
Notes
Optional Additions:
- Toasted almonds or pistachios
- Chopped parsley or dill
- Sautéed mushrooms, chickpeas, or roasted sweet potatoes for a heartier version
