Ricotta Mousse

A no bake, delicious summer dessert

Ingredients
  

  • 15 ounces whole milk ricotta cheese
  • 1 cup heavy whipping cream
  • 1/2 teaspoon vanilla
  • 1/4 cup confectioners sugar

Instructions
 

  • Place the ricotta in a mixing bowl and give a quick mix by hand
  • In a stand mixer with a whisk attachment, put one cup of heavy cream and beat until soft peaks start to form. (You can do this by hand, but it takes longer.)
  • While mixing to soft peaks, add the vanilla.
  • Then add the confectioners sugar and continue to mix until stiff peaks form.
  • Fold he whipped cream into the ricotta cheese by hand.
  • Your mousse is ready. You can chill until ready to serve or serve immediately.

Notes

You can layer your mousse in mason jars or pretty glasses with a myriad of complementary treats. Use your favorite jams, fresh berries, compote, chocolate chips, caramel sauce, honey, cookies crumbs? Whatever you fancy.
