Strawberry Burfi

A delicious twist on the classic Indian sweet, made with creamy milk solids and infused with sweet strawberry flavor.

Ingredients
  

  • 3 ¼ cup Strawberry ice-cream or preferred flavor
  • 4 1/3 cup Full-fat milk powder

Optional Garnishes and/or Mix-Ins:

  • ½ tsp of ground cardamom
  • Pinch of saffron 1/8 tsp.
  • 4 Tbsp of Nutella + 4 Tbsp hazelnut oil mixed together for drizzle
  • Chopped/crushed nuts pecans, pistachios, cashews, etc.
  • Edible dried flowers roses, etc.
  • Edible gold or silver leaf

Instructions
 

  • Grease a 9x13 baking pan with oil/butter. Then line with parchment paper and grease lightly again to avoid any sticking.
  • Put a large, nonstick pan on medium-low heat, add strawberry ice cream and melt completely.
  • Once ice cream is completely melted, add in the milk powder gradually and stir into the melted cream mixture.
  • Reduce heat to low and mix gently with wooden spoon or spatula by folding mixture from outside, inwards. This will ensure all ingredients combine fully and you have a smooth consistency.
  • Continue to cook on low heat for 10-15 minutes, making sure to stir mixture continuously to avoid it burning or sticking to bottom of pan. The mixture is fully cooked once it has thickened and resembles smooth mash potatoes.
  • Carefully transfer the mixture into the greased pan and then immediately press down gently with spatula or back of spoon to even out the mixture and get a smooth top layer.
  • Top with desired garnishes and then allow to cool completely at room temperature, uncovered.
  • Once burfi is completely cooled, cut into clean, even slices and serve.
